Dutchman’s Hideout (6100 E. Mining Camp St., Apache Junction [480] 982-3181). Rustic wood-planked walls and brushed copper tabletops set the tone in this out-of-the-way place serving mesquite-grilled certified Angus prime rib of beef, steaks and seafood along with beer and wine. If you’re feeling more casual, the adjacent Mining Camp Restaurant offers all-you-can-eat family style dinners at long picnic tables. They’re seasonal, so call to make sure they’re open before you make the drive. $$$-$$$$

Firebirds Wood Fired Grill (3435 W. Chandler Blvd., Chandler [480] 814-8003). Inspired by the cuisine of Aspen, Colo., Firebirds specializes in steaks grilled over an open flame, fresh seafood and hearty pasta served in a lodge atmosphere. $$$

The Keg (3065 W. Chandler Blvd., Chandler [480] 899-7500). Dark wood, glowing fireplaces, extensive stonework and dim lighting make for a classy steakhouse and bar. The well-marbled meats are grilled to perfection, but you’re just as likely to fall in love with the outstanding twice-baked potato or the warm, crunchy sourdough round. (Mmmm, carbs.) For dessert, the Billy Miner Pie is lip-lickingly delicious. Additional locations in Gilbert (2240 E. Williams Field Road [480] 821-1500) and Tempe (23 S. McClintock Drive [480] 557-5552). $$$

Monti’s La Casa Vieja (100 S. Mill Ave., Tempe [480] 967-7594). If you love meat at reasonable prices and don’t want to work for it, Monti’s is probably your idea of culinary nirvana. Since 1956, the steakhouse has served filet mignon, ribs and burgers in an adobe hacienda constructed in 1871 by Tempe founder Charles Trumbull Hayden. $$

Trophy’s Steakhouse (7215 S. Power Road, Queen Creek [480] 840-3981). The owner, a big-game hunter, has his collection of 29 trophy animals on display at this eatery labeled “The hunter’s steak house.” Standard steaks dot the menu, as do wild game items like antelope smoked sausage, venison flank steak and elk and buffalo meatloaf. Growlers of nearly 18 draft beers were introduced in Summer 2012. $$
