Ceviche makes the perfect cool summer dish

Rainbow Ceviche, as prepared by chef Robert Madrid of Deseo in Phoenix. Ceviche is any mixture of fish or shellfish that is “cooked” by the acid of a citrus marinade. Because no heat is involved, it makes a great summer supper.
