Address: 8787 N. Scottsdale Road, Scottsdale

Major violations: 6

Inspector’s comments: Drain for the ice machine had inadequate air gap; bags of ice were stored on the floor in the walk-in freezer; there was excessive leaking in two areas, under the main dishwasher and the drain for dishwasher at bar, not draining to floor sink properly; cooked ground beef not fully cooled at proper temperature; prime rib on cook line and prime rib in kitchen both items had been out for one hour, not held at 130 degrees or above; multiple wet/soiled rags were out on the counters on cook line; sanitizer bucket at bar was in a clear food container with no label; there are areas on the cook line, pizza prep and back kitchen with tiles missing/broken and grout was in disrepair; brunch menu has prime rib and several eggs Benedict items that have no consumer advisory; employee handled raw fish then removed gloves and put on a new pair of gloves without washing hands; areas around main dishwasher had an accumulation of black organic matter on the walls and equipment; employee’s purse was hanging in the pizza prep area over open food items; there was no county-issued card on site.

Inspector’s comments: Employee only washed hands for eight seconds before returning to cook line; employee had a cup with liquid sitting on the prep table without lid or straw; there were no paper towels at the hand sink; inside of microwave was soiled; soda box was stored on the floor in the kitchen, a bag of onions were stored on the floor beside the back door; soiled wiping cloth were sitting in a clean pot on shelf in clean storage; two large pans of cooked beans, containers of cooked beef and cooked pork and opened soft cheese in reach-in cooler were not date-marked; upon arrival to establishment employee turned on switch at breaker box, no hot water for the first 20 to 30 minutes of inspection, hot water must be supplied to establishment at all times during operation; employee cooked food on flat grill without ventilation on, smoke built up in kitchen and dining area, ventilation hood must be operating when cooking under the ventilation hood; back door was open, did not have air curtain or any type of device to prevent insects from entering; back door propped open with filled trash can and pile of boxes; large juice jars for drinks were washed, rinsed and not exposed to sanitizer in sanitizing; two basins were full of soiled dishes; shelves in clean storage area were soiled; there was no certified food manager card for establishment; covered container of chicken in reach-in cooler not rapidly cooled using acceptable methods.

Inspector’s comments: Scoop for ice at the pool bar ice machine was stored on top surface of ice machine which was dirty; pizza slicer at cook line was stored wedged between two countertops; steaks were cooling for two hours not at proper temperature in cooler at end of cook line; soda gun nozzle at JD’s bar has significant organic debris build up (mold) and clean plates on the cook line in kitchen had accumulation of dried food splatter and crumbs on them; there were rodent droppings along wall behind bar; common drain for three compartment sink and for dish washer was hanging below flood rim of floor drain; bin of hot dogs dated Oct. 3 not properly disposed of.

Inspector’s comments: Cooked rice was found at 63 degrees after overnight cooling, not cooled to the proper temperature within the required time; raw chicken was stored over ready-to-eat foods in the walk-in cooler; the electric slicing machine has food debris remaining on food contact surfaces after ineffective cleaning; cooked chicken found with preparation date Oct. 10 not discarded on or before Oct. 16.

Inspector’s comments: Mexican soup not held at proper temperature; raw eggs were stored above tortillas in the refrigerator at the cook line; spoons, knives, plates and bowls all had food debris on them; margarita mixer machine, ice machine and soda nozzles had slime buildup; there was a water leak on the outside mop sink’s faucet; there was a grease spill and garbage under the grease Dumpster and garbage Dumpster; cleaning chemical spray was stored next to clean pots above the sink.
