It’s fitting that Rise Up Bakery’s signature cookie is called the OverAchiever. The brilliant blend

of oats, chocolate chips, coconut, pretzels and cornflakes combine to create all kinds of chewy-

crunchy-salty-sweet alpha perfection.

Because that’s what husband-and-wife owners Baker Jay and Danielle Lunt are, too. Not

content to rest on their success or laurels since opening in 2014, the couple recently hired an

international consultant to unlock the flaky secret of French croissants. The ham and cheese,

pain au chocolat and the kouign amann (the oh-so-good Brittany variation) have been

bestsellers.
